The dumpling with "a mouthful of soup" in Handan, a historical city, has gained reputation for thousands of years for delicacy and flavor, which is a well-known food throughout the Hebei province.

“一篓油”水饺是古城邯郸流传千余年的风味小吃,它形美味香、皮薄馅大、渊远流长,闻名燕赵。

It is said that the founder Wang Yixiang and his son run a successful steamed bun stand by the side of the South Gate of State Zhao in ancient years. One day, when the General Lian Po in State Zhao walked over there and decided to buy the buns, he was told that it was sold out. And Lian Po enquired,“What are the ones on your chopping board?”. Wang Yixiang’s son replied, “They are the raw buns that would be steamed well in one hour or so. ” Lian Po was so anxious that he put all the raw buns into a pot with boiling water. After a while, all the buns floated on the water. He thought highly about the buns and said “It is so delicious! There is a mouthful of soup as I bite it. ” Since then, the founder Wang Yixiang renamed the steamed bun stand into a dumpling restaurant “A Mouthful of Soup” which had been changed into “A Potful of Soup” in earlier Song Dynasty.

相传,创制人王一香父子早年在赵国南门外开了一间包子铺,生意很好,有一天,赵国大将廉颇途径此处,要买包子的时候,包子已经卖完。廉颇问到:“你的案板上不是包子?”王小儿说:“那是生的,还得蒸,大约一个时辰”,廉颇一听心急了,顺手将案板上的包子统统扔进开水锅里,不一会儿,锅里的包子全都煮浮上来,廉颇吃完后连声叫好:“一咬一口油,真香!”自此,王一香就把包子铺改为“一口油”水饺馆,北宋年间改为“一篓油饺子馆”。

In 1944, Wang Jintang (the descendant of Wang Yixiang) ran a dumpling restaurant on Luoxin Street in Handan. Insisting on using the qualified food materials and pork from newly-slaughtered pigs, the dumplings are made with grinding sesame oil and other fine spices in the processes of stuffing and shaping. When you have a bite of the dumpling, the soup in it will spill over. That is the story of the name of dumpling with “a mouthful of soup”. In 1999, it has been awarded as The Time-Honored Brand of China.

1944年王金堂在邯郸洛新街创建水饺馆。由于选料精细,坚持用当天宰杀的肉,配上小磨麻油和上等调味品,精心制馅、包制,煮熟后汁包馅,吃时满嘴流油,故名“一口油”。1999年邯郸“一篓油饺子馆”被评为“中华老字号”。

在家做“一篓油水饺”

鲜猪肉绞馅,拌以时令蔬菜,配各种调料,用老肉汤打匀;和面作皮,包馅成饺煮熟。皮薄见馅,馅抱成丸,油水充盈,味鲜肉嫩。吃的时候蘸着大蒜汁(即大蒜泥、酱油、醋、香油调匀),味道好极了!
